Baked Parmesan Zucchini


4 zucchini, quartered lengthwise

½ cup fresh grated parmesan cheese (sub for nutritional yeast)

½ teaspoon dried thyme

½ tsp dried oregano

½ tsp dried basil

¼ tsp garlic powder

Salt and pepper to taste

2 tbsp olive oil

2 tbsp chopped fresh parsley


Preheat oven to 350F. Coat sheet pan with olive oil spray. In a small bowl combine parmesan, thyme, oregano, basil, garlic powder, salt and pepper. Place zucchini onto baking sheet. Drizzle with olive oil and sprinkle with parmesan mixture. Place into oven and bake until tender for about 15 min. Then, broil for 2-3 min or until crisp and golden brown. Garnish with parsley.
