Dijon Crusted Salmon


3 tbsp extra virgin olive oil

3 tbsp Dijon mustard

1 ½ tbsp honey

1 tsp garlic powder

¼ cup finely chopped pecans or pistachios

4 teaspoons chopped parsley

4 (4oz) fillets of salmon

Salt and pepper to taste


Preheat oven to 400F. In a small bowl, stir together the olive oil, mustard, garlic powder and honey. Set aside. In another bowl mix the pecans and parsley. Sprinkle each salmon with salt and pepper. Brush each salmon filet lightly with honey mustard mixture and sprinkle the tops with the pecan mixture. Bake salmon for 15 minutes in the preheated oven.
