Steamed Artichoke with creamy Dijon dressing


3 artichokes (raw)

1 lemon

½ tbsp kosher salt

1 tbsp Dijon mustard

1 tsp Greek yogurt or mayo

2 tbsp white vinegar

1 tsp balsamic vinegar

Salt & pepper to taste


Bring a large pot of water to a boil. Cut half of the lemon into wedges and squeeze the other half of the lemon juice into the boiling water. Add kosher salt and stir. Place the artichokes in the boiling water and cover. Steam for 30-40 min. Mix all sauce ingredients in a bowl. Enjoy!
