Taco Salad


2 whole wheat tortillas sliced into strips

2 tbsp extra virgin olive oil

1 medium head of butter lettuce/spinach/kale/green of choice

1 cup shredded red cabbage

½ cup black beans (rinsed and drained)

½ cup pico de gallo

¼ of an avocado sliced

Jalapeno slices, optional

Cilantro lime dressing:

2 cups fresh cilantro

1 garlic clove

¼ cup lime juice

1 tbsp honey

½ tsp ground coriander

½ tsp sea salt

½ cup Greek yogurt or ½ avocado
