Turkey Chili


2 tsp extra virgin olive oil

1 yellow onion, chopped

3 garlic cloves, minced

1 medium red bell pepper, chopped

2 medium carrots, diced

1 lb extra lean ground turkey

2 tsp chili powder

2 tsp cumin

2 tsp paprika

1 tsp dried oregano

½ tsp salt plus more to taste

1 can diced tomatoes or ¾ cup Rao’s marinara tomato sauce

1 can black beans or kidney beans

2 tbsp ketchup (no sugar added from Primal Kitchen)


Heat up a large pot over medium high heat. Place oil in a large, heated pot and add in the onion, garlic, red pepper and carrots. Sauté for 5-7 minutes, stirring frequently. Add in the ground turkey and break up the meat. Cook until no longer pink. Add the chili powder, cumin, oregano, paprika, and salt. Stir for about 20 seconds. Next, add in the tomatoes, ketchup and beans. Bring to a boil and then reduce heat to simmer for 30 minutes. Taste and adjust seasonings and salt as necessary.
